Dark Ronin 185mm Kiritsuke Gyuto

$760.00

This blade was hand forged in Japan by Kosuke Muneishi. it is made of Yasuki Hagane Blue #2 steel, with a traditional Kurouchi finish. It is extremely sharp, rating 64-65 on the HRC scale. It has a fine, sharp Kiritsuke tip for detailed work.

You can almost see glowing embers and flame through black smoke, and haze, in the wood. It pairs well with the black Kurouchi finish of the blade, it’s a dark knife ready for war in the kitchen.

This is a new process that I will use for certain pieces, it has a truly unique character, and feel!

This knife is fitted with a custom koa wood handle. It is an oval shape flattened at the top and bottom, allowing for precise control, and comfort in the hand, making long sessions at the cutting board a breeze. This handle was measured, shaped, and sanded to #2000 grit, then completely charred. The handle was rubbed with hemp seed oil, then coated in natural wax. I lightly resanded the handle to coax out the natural lustre through the char, finally the handle was buffed and re-finished with oil and wax for resilience, and durability.

Includes magnolia saya
