This 165mm Santoku, hand forged in Japan, from Aogami Super Blue steel folded in stainless steel. A fairly thin blade with a hammered finish, and moderately curved edge. Blade hardness of HRC 62-63.
The traditional Japanese octagonal shaped handle is crafted from Koa wood, lightly charred at the bolster. Buffed to a 10,000 grit finish, hand rubbed twice with a natural hemp seed oil, then finished with a natural wax.
